On the day I made lunch at the beach, I made a quick little dessert to go with it that the kids really liked. It's a Chocolate Chip Ball. YUM!
CHOCOLATE CHIP DIP
- 1 (8 ounce) package cream cheese, softened
- ½ cup butter, softened
- 3/4 cup confectioners' sugar
- 2 tablespoons brown sugar
- 1/4 teaspoon vanilla extract
- 3/4 cup miniature semisweet chocolate chips
In a medium bowl, beat together cream cheese and butter until smooth. Mix in confectioners' sugar, brown sugar and vanilla. Stir in chocolate chips. Cover, and chill in the refrigerator for 2 hours before serving. Serve with graham crackers and/or sliced green apples.

It really is great, Tina! My kids don't like ANYTHING that has cream cheese in it, but I left that little piece of information out when I explained the dish to them. They are none the wiser. ;)
