No-bake chocolate eclair cake

I really wish I'd taken a picture of this dessert at the beach. But alas, I did not. Steph at Plain Chicken will be mortified. #bloggerfail 

This is what Patsy prepared for dessert at the end of the week, and it was scrumptious!



CHOCOLATE ECLAIR CAKE
1 box graham crackers
1 lg. pkg. instant vanilla pudding
3 1/2 cups milk
1 small carton Cool Whip
Line bottom of 9x13 pan with graham crackers. Mix pudding and milk in a bowl according to package directions. Blend in Cool Whip.

Pour mixture over graham crackers. Place more crackers on top. Frost with chocolate frosting (recipe below).

CHOCOLATE FROSTING
1/4 cup cocoa
2 Tbsp. Karo syrup
2 tsp. vanilla
3 Tbsp. margarine
1 1/2 cup powdered sugar
Milk (enough to make frosting spread easily)
